Fill the tank, record the starting odometer reading, drive as usual, then fill it again and enter the gallons added.

Your second fill-up should bring the tank to about the same level as the first. Partial fills can distort the estimate.
How to calculate MPG
Subtract the starting odometer reading from the ending reading. Divide the miles driven by the gallons required to refill the tank.
For example, driving from 12,500 to 12,800 miles is 300 miles. If it takes 12 gallons to refill, your fuel economy is 300 ÷ 12 = 25 MPG.
